Ingredients:

  • 200 grams of young amaranth leaves;
  • 2 eggs;
  • 1 onion medium milled;
  • 2 cloves of grated garlic;
  • 2 tbsp. Spoons of grated cheese;
  • 2 tablespoons of crushed bread;
  • 2 tbsp. Spoons of wheat flour;


The leaves of amaranth are boiled in boiling water, after which they are ground to such a state that a practically homogeneous mass is obtained.

All components are mixed to a homogeneous mass by adding salt and pepper to taste. If the mass at you will turn out too dense, it is possible to add a little milk, for its liquefaction.

From the resulting mass, form cutlets and roll them in bread crumbs or breadcrumbs.

Cutlets should be fried in vegetable oil, preferably fry them until a crusty crust is formed, so that inside the cutlets they are also well fried.

Serve cutlets best with lemon juice, then they are much better to taste.

This recipe is perfect not only for vegetarians. This dish is not only delicious, but also very useful, as the leaves of amaranth contain a lot of vitamins and nutrients. In addition, if you want to please yourself with such cutlets in winter, then the young amaranth leaves in summer can be put in the freezer, and you will have the opportunity to cook them at any time of the year.
