Amaranth is an nutritional powerhouse, but it can sometimes have a slightly bitter aftertaste if prepared incorrectly. This recipe features a "secret hack" to ensure your porridge is creamy, nutty, and delicious every time.

Ingredients:

  • Amaranth grain: 1/2 cup (whole or polished)

  • Water: 1.5 cups (classic 1:3 ratio)

  • Ice cubes: 2–3 cubes (the secret trick to remove bitterness)

  • Salt: A pinch

  • To serve: Butter or coconut oil, honey, fresh berries, or nuts.


Step-by-Step Instructions:

Step 1: Rinsing the Grain

Thoroughly rinse the amaranth under cold running water using a fine-mesh strainer. This removes dust and surface saponins, which are natural compounds that can cause a bitter taste. 


Step 2: Soaking (Optional)

If you have time, soak the grain in water for 1–2 hours. This softens the texture and helps neutralize phytic acid, making the minerals easier for your body to absorb. Drain the soaking water before cooking.

Step 3: Boiling the Amaranth

Place the rinsed grains into a heavy-bottomed saucepan. Add 1.5 cups of fresh water and a pinch of salt. Bring to a boil over high heat, then immediately reduce the heat to the lowest setting.
